
Take a few sprigs of thyme, smack them either on your wrist or the glass to allow aromatics to become present, and carefully & thoughtfully place it in the drink, allowing the thyme to stick out of the top.
Before making our cocktail, we must have on hand the home made ingredients: fresh lemon juice, earl grey & thyme tea, and orgeat syrup. There are good options for orgeat syrup for purchase; I decided to make mine at home.
For the earl grey & thyme tea, I included one sprig of thyme per bag of thyme tea. These can be adjusted to your liking. You will need one teabag or teaspoon of earl grey tea & one sprig of thyme per 250 mL water. Once steeped for about 3 minutes, remove thyme and tea and allow to cool.
My orgeat was made by mixing one quart of fresh made almond milk, 32 ounces of white sugar (by weight) and blending together in a Vitamix. Once blended, add 1/4 tsp of orange blossom water, and add 1/2 tsp of almond extract for the final product. Mix and reserve.
To prepare the cocktail, you will add in a shaker tin:
45 ml Hayman's Old Tom gin
15 ml Dolin sweet vermouth
7.5 ml Yellow Chartreuse
22.5 ml fresh lemon juice
15 ml orgeat syrup
60 ml earl grey & thyme tea
Add ice to tin, seal, and begin shaking. You will shake for about 8-15 seconds depending on the ice you are using. Once properly diluted, release the tin's seal. In a collins glass, use a Hawthorne strainer and a fine mesh strainer to pour the cocktail into the glass. Fill the glass with ice (I am using 1"x1" Hoshizaki cubes). Take a few sprigs of thyme, smack them on the glass or your wrist to allow the aromatics to become more present, and carefully & thoughtfully place it in the drink.
Serve, enjoy, and make small talk with your friends and peers.
