60ml Soda Water
10ml Rosemary Syrup
Build, over ice, garnish with a rosemary sprig
To make the Oil Washed Hayman's Old Tom Gin
1:4 ratio, high quality sunflower oil : Hayman's Old Tom Gin
Shake in container after adding. Afterwards, letting settle before putting it in the freezer for a day.
After a day, you can remove the frozen layer of sunflower oil on top of the gin. Put the gin through a coffee filter and voila your Oil Washed Old Tom Gin.
To make the rosemary syrup. Start off by making a rich simple syrup (1cups:2cups, water:white sugar) and whilst still hot pouring it over around 4-5 large sprigs of Rosemary (fresh from your garden!).
