
Whisk the white of one egg with two teaspoons of sugar until stiff peaks form. Add two heaped tablespoons of the resulting meringue to a shaker. Add all other ingredients and dry shake for at least a minute.
Add ice and and wet shake for at least another minute. Strain into glass, add one further heaped tablespoon of meringue to glass. Blowtorch the meringue to caramelise.

1 1/3 fl oz | Calvados / apple brandy / straight applejack |
2/3 fl oz | Oloroso sherry |
1 fl oz | Lime juice (freshly squeezed) |
1⁄8 cupful | Powdered sugar (white sugar ground in mortar and pestle) |
1 2/3 fl oz | Egg white (pasteurised) |
