Sherry Pie

How to make:

Whisk the white of one egg with two teaspoons of sugar until stiff peaks form. Add two heaped tablespoons of the resulting meringue to a shaker. Add all other ingredients and dry shake for at least a minute.
Add ice and and wet shake for at least another minute. Strain into glass, add one further heaped tablespoon of meringue to glass. Blowtorch the meringue to caramelise.

2/3 fl oz Heering Cherry Liqueur
1 1/3 fl oz Calvados / apple brandy / straight applejack
2/3 fl oz Oloroso sherry
1 fl oz Lime juice (freshly squeezed)
18 cupful Powdered sugar (white sugar ground in mortar and pestle)
1 2/3 fl oz Egg white (pasteurised)
