The foam is the garnish
Stir 50ml of napoleon mandarin with 5ml sugar syrup as well as 3 dashes of Orange bitters.
In an Isi whipper combine 1 egg white, 25ml milk,
50ml dark chocolate liquor
| 1 2/3 fl oz | Mandarine Napoleon liqueur |
| 1/6 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) |
| 5/6 fl oz | Milk (whole milk/full 3-4% fat) |
| 3 dash | Orange bitters |
| 1 fresh | Egg white |
| 1 2/3 fl oz | Mozart Dark Chocolate liqueur |
