Review

This relatively recent addition to Paris' bar scene (opened August 2015) is not just any cocktail bar. Located near the lovely canal Saint-Martin area, the Gravity Bar's concept is very innovative. The co-founder, Marc Longa was an artistic director for almost 20 years before taking bartending courses and opening this spot. But above all, Marc is an extreme sports fanatic. So he decided to adapt all the sports sensations into the design and the cocktails menu of the Gravity Bar. Hence the amazing ceiling built like a wooden wave and the large semi-circle lobby which looks like a big rock.

Michael Mas, one of the best bartenders in Paris (Park Hyatt Paris Vendôme Hotel bar, Experimental Cocktail Club, Mary Celeste...) joined Marc in the adventure. A nice challenge for this young man, who manages to create a drinks menu around sensations: disorientation, weightlessness, cold sweat and exaltation... Cocktails go from bitter to sour and sweet. For the winter 2015-16 season, Michael has a preference for herbal liquors, Xeres, vermouths and homemade products. Be sure to try the short drink, "Back to the roots", with Stolichnaya vodka infused with "herbes de provence" (thyme, laurel, rosemary, oregano...), Carpano classic vermouth, raspberry purée and lemon.

In addition to the excellent cocktails, the Canadian chef Frédérick Boucher offers gourmet dishes. Gravity bar definitely paves a new way for mixology in Paris: creativity, friendliness and great foodpairing.
