A Californian absinthe made by Crispin Cain and based on a spirit distilled from apple cider and honey mead in the original Germain-Robin pot still. In this spirit Crispin infuses rose geranium, lemon balm, wormwood, hyssop, lemon verbena, star anise, fennel seed, lemon peel and mint for one week..

before redistilling the infusion.

Review and Tasting

Appearance:

Clear but not bright, very pale straw yellow with faint green tinge. Light louche with water.

Aroma:

Pungent star anise and fennel with wormwood, lemon verbena and very faint rose blossom. Water reveals potpourri and herbal complexity.

Taste:

Aniseed and peppermint freshness explodes on the palate with bitter wormwood and liquorice. Peppermint is amplified and sweetness emerges with water.

Aftertaste:

Liquorice lingers on the long aniseed finish.

Overall:

Liquorice notes make this complex Californian absinthe distinctly pastis-like. Try from the freezer diluted with 1.5 to 2 parts well-chilled water with the merest dash of sugar syrup.
