Desmond Payne, MBE, has been distilling gin for over 50 years and over those years noticed that gin distilled on Mondays was special. Why?
Normally Beefeater's nine botanicals (juniper, angelica root and seeds, coriander seeds, Seville orange peel, liquorice, almonds, orris root and lemon peel) are steeped in alcohol for 24 before distillation. However, gin distilled on Mondays benefits from a 72 hour steep over the weekend. Normally "Monday's gin" is blended with gin produced on the other days to maintain consistency but not this batch distilled on Monday 21st January 2019.
