A white agricole rum produced from sugar cane juice fermented 24-36 hours to 5-6% alc./vol., then distilled to approx. 72% alc./vol. in a copper and stainless steel column still. After distillation it is stored in wooden vats with a capacity of between 10,000 and 60,000 litres for 3-6 months.

While in the vat the rum is aerated to encourage evaporation of volatile compounds. The rum is then hydrated to bottling strength.

Damoiseau rums are the market leader in Guadeloupe, with a 50 per cent market share. They are also available in mainland France and exported to more than forty countries.

Appearance:

Crystal clear.

Aroma:

Appealing cane sugar aromas jump out the glass with faint fusel and wonderful floral aromas.

Taste:

Generous, slightly sweet cane sugar palate with subtle tropical fruity flavours slightly tainted by faint bitter hairspray-like notes.

Aftertaste:

Sugar cane flavours linger in the long, slightly herbaceous finish.
