High West describes this as "an un‐aged oat whiskey with a mash bill containing 85% oats and 15% barley malt."
When it comes to the thorny issue of whether a spirit can be called a 'whiskey' if it has not been aged, they go on to say West Silver Whiskey "spent all of five minutes in a barrel to minimize the barrel's influence on the taste of the native spirit. We call ours Silver™; because we distil it in old town Park City, one of the west's richest silver mining towns."
Classified by the TTB as a 'light whiskey', i.e. it is distilled at more than 80% alc./vol. and less than 95% alc./vol.. High West says it "cut the 'tails' of this whiskey at 176 proof [88%], when the fusel oils begin to show up. Fusel oils can taste like Band-Aids and we figured you'd appreciate us taking that out! We also "proof" the whiskey down with our high mineral content water - mainly because it tastes pretty good."

Crystal clear.
Restrained, toasted cereal grain nose with grassy granola aromas.
Aromatic grassy notes are more obvious on the apple and pear fruit-influenced palate with subtle anise and Indian spice flavours.
Spice and aniseed linger longer than the fruit on the medium finish.
