A freshly cut slice of pear

How to make:


Muddle the clove in the bottom of the shaker and add all other ingredients. Shake vigorously and double strain into a frozen coupe glass. Make sure to smell the freshly cut slice of pear while drinking this cocktail as it is packed with complex aromatics which are perceived differently for each person.

35 ml Patrón Reposado tequila
15 ml Poire William eau-de-vie
20 ml Patrón Citrónge Extra Fine Orange Liqueur
15 ml Lime juice (freshly squeezed)
5 ml White balsamic vinegar
2 dash La Fée Parisienne absinthe
1 dried Clove

A beautifully complex variation on a classic margarita with different layers of acidity.
Having done some research about pears - one of Belgium's most popular fruits - it turns out they share quite a lot with agave (mainly grassy and tropical notes).
The combination of Patrón reposado, pear eau de vie and Patrón citronge orange is accentuated with dried clove for two reasons:
- clove is a wonderful match for pears and even more so for oranges
- clove is a major flavor component in quality tequila when analyzed over gas chromatography

When you combine all of the above, add a dash of absinthe and have a smell at your shaker, you notice lots of honeyed citrus, exotic pear and spicy, yet refreshing peppery notes.
For me personally, these are also great characteristics for an amazing tequila.
To provide a final layer of flavor into this drink, I have opted for a mixture of lime juice and white balsamic vinegar.
Both bring acidity and balance but on different levels (citric/malic VS acetic acid respectively).
