Serve in a

Hurricane glass

Garnish:

On the Earl grey tea Foam, put on Rosemary leaf , a slice of orange dry on the foam, and a caviar of raspberry ( spherification ) on the Orange Dry.

How to make:

Do infuse the earl grey tea on the side ,
Put on the shaker all the recipies,
Shake,
put the tea in a other shaker , make a dry shake worh sugar sirop and some lime,
Remove the ice in the shaker and do a dry shake
Make a double strain for verse in the hurricane glass,

For the caviar, just boil 250ml of water with 50ml of rapsberry cordial, add 2once of Agar-Agar

After boiled, put few drop of hot raspberry cordial in fresh oil for make the spherification, strain and soak in the cold water . Keep the caviar in a little jar.

2/3 fl oz Mandarine Napoleon liqueur
1 fl oz Delord V.S.O.P./Napoleon Bas Armagnac
2/3 fl oz Hendrick's Flora Adora gin
1/2 fl oz Rose sugar syrup
1 leaf Rosemary sprig
2/3 fl oz Chambord liqueur
3 dash Suze gentian liqueur
2/3 fl oz Lime juice (freshly squeezed)
1 2/3 fl oz Earl Grey tea foam
