Am-Am Sour

Old-fashioned glass

Garnish:

Express and discard orange twist.

How to make:

Shake one round without ice and one round with ice, strain into single old fashioned or medium-large coupe glass, and garnish with orange oil from a twist.
Note: I selected 3/4 oz egg white, but a single egg white from a medium or medium-large egg will work great without measuring.

1 fl oz Adriatico Amaretto Liqueur
1 fl oz Averna amaro
1/2 fl oz Plantation Overproof O.F.T.D. rum
3/4 fl oz Lemon juice (freshly squeezed)
1/4 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
3/4 fl oz Egg white
