Coupe glass

Garnish:

Caramelised dried orange wheel on the rim, toasted almond flakes on the foam, sprig of rosemary.

How to make:

Dry shake all ingredients without ice for 15 seconds to emulsify the egg white.
Add ice and shake again vigorously for 10-12 seconds.
Fine strain into a chilled coupe glass.

1 1/2 fl oz Adriatico Amaretto Liqueur
1 fl oz Orange juice (freshly squeezed)
2/3 fl oz Lemon juice (freshly squeezed)
1/3 fl oz Honey syrup (1 honey to 1 water)
1 fresh Egg white
