Grapefruits zest, expressed then placed diagonally against the glass
Chill Highball, strain water out of glass
Add Beesou, Suze, Ambrato and theory cordial, quickly stir to mix.
Add soda, and gently lift 2 times to incorporate.
Express grapefruit zest, and garnish.
Theory Cordial:
Peels of 1 grapefruit
Peels of 1 orange
Equal weight of grapefruit and orange peels to caster sugar.
3G chamomile flowers(Dried)
250ml of just off boiling (90°C)
Use the peels and sugar to create an oleo; place peels and sugar into a container and massage gently to coat the peels in the sugar.
Cover and leave at room temperature for 2.5 hours.
Weigh 3G of dried chamomile flowers and steep in 250ml of 90° water for 2.5 minutes and strain immediately.
Chill the tea, then add to the oleo. Let this chill in the fridge for 1 hour, then strain thoroughly.
After straining place in a bottle and leave in the fridge until needed for use.
