Garnish:

Elderflower and Citrus Dust

How to make:

Dust half of the glass with Elderflower dust to garnish.
Combine all ingredients other than Prosecco and Shake in Bostin Tin.
Strain into wine glass.
Add cubed ice.
Top with the Non Alc Prosecco.
Honey and Bee Pollen Cordial -
Combine 300ml of hot water with 30g Bee pollen to disolve. Strain to get rid of big particles. Then add 900g of honey (3:1 ratio). Then add 2% Citric Acid.
Garnish -
Forage Elderflower, collect waste orange zest from service. Dehydrate both ingredients, and combine with equal parts Citric Acid, Dextrose and green luster. E.g. So 10g dehrydated powder, 10g Citric Acid, 10g Dextrose, 10g Green luster
