The label claims this rum has been "organically made since 1785" and indeed that is when the River Antoine Estate distillery which makes this was established. Little has changed since then.
A water wheel still powers the mill which is used to crush the locally grown sugar cane to produce the fresh juice which is concentrated in cast iron boiling coppers before being fermented by wild airborne yeasts in concrete fermentation tanks. The rum is distilled in copper pot sills and bottled directly from the still.

Crystal clear but with snowy precipitation.
Pungent fruity nose with sweet strawberry chewing gum-like aromas and freshly baked tart-ta-tan. With the addition of water moist carrot-cake aromas emerge with cinnamon and chocolate powder.
(hydrated to approx. 43%) The palate manages to be both sweet and dry simultaneously with dark chocolate brownie, nutty-dedicated coconut and Marcona almonds.
Roasted nutty finish with vanilla and chilli chocolate spice.
