Made from an infusion of baby ginger with cognac, Tunisian ginseng, Tahitian vanilla beans and Provence honey. The ginger is picked, washed and cubed, all by hand, before being cooked with herbs and spices. The ginger is then shipped to Jarnac in France where it is infused with cognac.
Canton Delicate Ginger liqueur was originally launched back in 1980s by N. J. 'Sky' Cooper. Launched in 2008, the new, reinvigorated Canton ginger liqueur is the brainchild of Sky's son, John Cooper, who has named his company after his grandfather, 'Maurice Cooper', also a liqueur maker.
The original 1980s Canton liqueur claimed to have been created centuries ago for the emperors of old Canton who "treasured the value of ginger" and was produced from six different varieties of fresh ginger with gentle herbs and ginseng, blended with brandy and a touch of honey. It was said to originate from Jing An Town, Doumen, Guangdong Province, China.
Maurice Cooper et Cie claim the ginger used to flavour this liqueur comes from colonial Indochina (now Vietnam), and a ginger estate called Domaine de Canton.
The distinctive 'pagoda' shaped bottle is designed to look like a bamboo shoot but is also somewhat reminiscent of a Chinese lantern.

Όψη:
Clear, straw pale yellow with light golden flecks.
Μύτη:
Mild warm candied ginger, ginger cake, brandy, lemon zest and peppery spice.
Στόμα:
Hot red pepper tingles a spicy gingery palate. Starts syrupy but the heat and citrus-like acidity quickly build to the extent that this liqueur ends up far from overly sweet.
Επίγευση:
Lingering hot, peppery ginger.
