This Italian dessert wine is from the Le Marche region of Italy on the Adriatic coast, to a recipe dating back to the middle of the 18th century. Wine from selected grapes is mixed with the juice of visciola sour cherries and sugar.

The cherries and hand-picked in June, are mixed with sugar, stored in glass demijohns and left under the sun until September. The juice is then removed and sealed in barrels. The remaining cherries are left to ferment with red wine must until March, at which point the juice is added back in to the fermented must which has now become wine. The product remains in the barrels for six months, then is bottled and left for a further two months. The recommended serve is chilled and served alongside chocolate desserts, fruit flans, ice cream or strong cheeses.

Dark claret red.

Μύτη:

Vanilla ice-cream, cream soda with red forest fruit and fruit tannin - somewhat akin to a melted raspberry ripple ice-lolly.

Στόμα:

Rich fruity with red wine (Cabernet Sauvignon) tannins balanced by sugar, fruit tannins and rich vanilla.
