Petersen & Sønner, a small family meadery, brew this mead using Danish honey fermented and stored in oak barrels. While they add a touch of ginger and spice, they do not add sulphur or fining produce to clarify – hence expect some haze and potential sediment.

Όψη:

(sample bottle Batch 8, 2015) Hazy (will form sediment in bottle if left), light-mid golden amber.

Μύτη:

Heather honey with pronounced floral scents.

Στόμα:

Slightly sweet yet balanced with vinegar-like tartness. Honey flavours predominate with a hint of oak and light ginger-led spice. Faint floral notes.

Επίγευση:

Floral honey with some citrus acidy and mild spice.

Συνολική αίσθηση:

Perfectly balanced and with a pleasant mild spice, this mead is complex and quaffable. Best enjoyed at or just below room temperature.
