An unpasteurised or filtered amber ale carbonated by secondary fermentation in the bottle so yeast cells cloud the beer and form a sediment. In Australia, this beer's home, it is usual to first gently roll the bottle from side to side to agitate the sediment prior to pouring into the glass.

Lovingly known by aficionados as the old 'Red Label', this beer is said to have changed little since Thomas Cooper first produced it in 1862.

Appearance:

Cloudy, honey coloured with thin white from sediment. Thin off white head.

Aroma:

Fruity and yeasty with lemon zest, grassy hops and fresh coriander.

Taste:

Acidic - tart cooking apple, bready, hoppy palate with yeast presence very evident.

Aftertaste:

Slightly bitter, grapefruit citrusy and grassy hops.
