Septem brewery is in Orologio on the Greek island of Euboea (AKA Evia). The brewery was founded in 2009 by chemist and oenologist, Sophocles Panagiotou, and economist, Georgios Panagiotou. ‘Septem’ is Latin for number seven, the number of days in a week, so accordingly the beers produced by the brewery are each named after a different day - "every day has its unique taste."
