Vanilla Infused Rum

The pods of a tropical plant which belongs to the orchid family, vanilla has long been a prized flavouring. In this guide, recipes utilise its magic by infusing it in a spirit, most often rum or vodka. Simply take two quality vanilla pods (roughly 6in/15cm long) and split them lengthwise with a sharp knife. Place them in the bottle of spirit you want to flavour and leave it to infuse for a fortnight, turning occasionally.
