Raspberries

Raspberriess grow on brambly bushes and are related to the rose. They can be cultivated in a wide range of colours, from white or yellow to orange, pink or purple, as well as the more common red and black, and that’s before we get to their family tree.

The loganberry is a cross between a blackberry and a raspberry and is named after its Californian creator, James H Logan. Other later hybrids of the two fruits include the tayberry (named after the Scottish river) and the boysenberry (named after its creator).

The juice of both raspberries and blackberries is intense and a little goes a long way. This is just as well because there’s precious little juice in each berry and you’ll find putting them through an electric juicer a complete waste of time. Instead, either blend them into a puree or (as I do) muddle the fruits in the base of your shaker or in the glass. Recipes in this guide state how many fruits you should muddle for each drink.
