Having some of our own passionfruit syrup to hand, we decided to go troppo on this and substitute 10ml of it for the 5ml simple syrup. Very nice indeed for us. (We guesstimate that our syrup is about a half as sweet as the commercial simple syrups that we usually, lazily, use.) We usually, but not always, go with the Nuclear Banana Daiquiri...because if and when you want a bomb, why settle for a firecracker (as subtly sophisticated as the banger might be).

Need to add the crushed ice and quantity to the step in this, made it without seeing the video and added ice after, managed to save it but the end result could of been better.

Yes. He is Alejandro Bolivar, head bartender at the legendary El Floridita in Havana, Cuba. Video shot in my last home bar, the Cabinet Room, when he was visiting London.
