To save cleaning the juice extractor, I muddled 2 ginger slice coins in the base of the shaker (in place of ginger juice) before adding other ingredients. Then I shook rather than stirred – sorry! The result (using 2 spoons of honey) was just on the tart/dry side and with the low proportion of spirit and enlivening ginger making this Paloma brilliantly suited to brunch or a hot afternoon.
