Delicious. Mostly rum, so make sure you use rum you like to taste. I used Pusser's and Appleton 8 yr, and was very happy. The pineapple and lime are classic - I'm not sure how much the maraschino cherry syrup brings, but I note that it is very thick, rich and flavorful, and so I think it is significiant. I used syrup from Bada Bing jarred cocktail cherries.
no pineapple around, Giffard pineapple liquor to the rescue, Hamilton black pot for jamaican rum. For the crushed ice, i poured the drink into a dry glass, put the remaining ice on my beastly blendtec and pulsed a few times and re-joined them on the same glass. the idea is shaken ice carries some of the cocktail flavors already thus minimizing overall waste of ice and cocktail ... next time no simple syrup, falernum ;)
Interesting drink. Starts easy with pineapple, Maraschino cherry juice and rum, but it gets drier as you progress, with the Jamaican rum really changing the end result.
You can't go wrong with any of the tiki cocktails from Don the Beachcomber. I was lucky to eat in two of his restaurants. The cocktail is fruity without being too sweet. The melting ice is key with this as with many of the tiki cocktails. Loved it.
