Thanks for sharing - I was looking for a warming cocktail for COLD weather. I used apretty pedestrian sake, and DiSarrano, and skipped the bit of sugar (with amaretto - what's the point of adding sweetness?) Sake nose melds nicely with the amaretto, and the flavor notes complement each other as well. Sake cuts the sweetness considerably, and adds the fundamental fermented rice sake flavor, and creates a sense of a salty/savory slant to the amaretto. Very nice.
