The caraway actually pairs unexpectedly good with the lime. I used richa demarara syrup came out nice as well, but in the end it was a little bit too sweet for my liking. Next time I might go with 10~12.5ml syrup. I used Danish akvavit so I'm inclined to call mine a Dansquiri ("Dansk" is a Danish adjective denoting somethign being Danish).
Have not tried it but please be aware that not all Scandinavian akvavits are seasoned with caraway! Some are seasoned with dill, fennel and some obscure regional herbs. For an akvavit with a robust caraway aroma I would recommend Aalborg Taffel Akvavit.
Had some aquavit left, so I tried this one. Pretty nice cocktail. I would put a little less lime juice (guess depends on lime itself) or try use brown sugar syrup.
