Amaretto will give some of the almond flavour and sweetness but not to the same degree of concentration. Worth a try with a larger measure.

Does this orgeat syrup need to be refrigerated after opening? There is no indication on the bottle which makes me think it can be left out at room temperature, but I wanted to ask your advice.

It can be stored at room temperature after opening but it will last a lot longer if you keep refrigerated.

Is this stuff equivalent in sweetness to 1:1 or 2:1 homemade orgeat? I'm unsure how much to use in recipes that call for this stuff.

This is close to 2:1 strength - as is the case with most commercially produced sugar syrups.
