Absinthe Cooler
The basil is subdued, as is the elderflower with absinthe being the predominant flavour – although not domineeringly so

Surprised this turned out more than palatable. Used Fever Tree ginger beer. Little elderflower presence at the fore, but it blooms late in the aftertaste. Need some greasy seafood or herbal fowl dishes to give this some depth and contrast?

As a local restaurant has done we replaced the basil with sage and ginger ale with Prosecco. A delicious alternative.

Made this recipe with a lot more basil (10 leaves) and slightly less absinthe (40 ml) and just a splash of ginger ale (50 ml), delicious!
