I’m a huge fan of gently squeezed homemade pomegranate juice in cocktails, this recipe ticks all the boxes with a wonderful balance of sweet and sour. It’s become a firm favourite.

Lovely poise here. I suppose "solace" is a play on the word "solstice" which, winter-wise, we have just passed, thankfully.

Again, a drink for the solstice, especially as our lime, orange and pomegranate are producing fruit.

Excellent cocktail if you use some extra rhum agricole, i.e. 1.5 shots. I used Husk’s pure cane spirit from Tumblegum, Aus.

It's a good call on the Husk, but you'll have to enjoy the agricole 'funk' (whatever that means). Maybe you've been listening to too much James Brown lately...3/4 shot of Husk is way funky enough for us.
