This is lovely. Rich fruit, yet complex. It has the right amount of bitter (very mild) so as to not overwhelm the Calvados. I used the rich Cocchi Torino as my sweet vermouth & it played perfectly as a bridge in this one. I used combination of Bittermens Burlesque Bitters & Angostura. Will revisit this one every year when the temperature drops. Well done.

Revisited this on the occasion of a new bottle of Avallen. Not just quintessential but peak Clapham! Truly exceptional.

Velvety, rich, decadent, with just a touch of the madcap, as befits the name. The flavours keep rolling forth on the palate with each sip. Boozy apple meets chocolatey richness from the vermouth, as well as bite from the amaro. Spiffing on a rainy winter’s night!

Used Averna instead of Lucano. Still get some licorice, but the Calvados stands out. Boozy.

Quintessential Clapham. The name is such a tell.
