Drouet et Fils boasts 80 acres (39 hectares) of vineyard, 70% of which lies in Grande Champagne with 30% in Petite Champagne. Only Grande Champagne is used in the production of their own cognac.

The estate is mainly planted with Ugni Blanc grapes with 7% colombard. Drouet double distil on the lees using two small traditional 10 hectolitre copper sills. The distillate is aged in new Tronçais or Limousin oak casks for 6 to 12 months before being transferred to seasoned oak casks to continue aging.
