Not sure if anyone is interested in this here but if you are I would be interested in your suggestions. I am working on a non-alcoholic version of this. Here is my recipe so far. Does anyone have a different suggestion for the Cherry Heering substitution?

1 oz - Lyre's - Non-Alcoholic American Malt
1 oz - VERSIN Non-Alcoholic Vermouth Alternative
1/2 oz - Torani Cherry Syrup
1/2 oz - Beckett's '27 N/A Amaretto
1 oz - Orange Juice.

Disappointingly - it is worth juicing fresh pomegranates to make this. Disappointing because juicing pomegranates is a real faff. But definitely worth it. Fresh and delicious

Easiest way is to blend the arils and strain off the juice.

Good, but sorrily not up to our taste because the cacao note is too dominant, although I used a quite strong Gin ("Wild Boar"). It could be interesting to replace a part of Creme de Cacao with something orangey, possibly Triple Sec and use a bit more lemon. This would naturally be a different cocktail...

I’ve replaced half the creme de cacao with passionfruit syrup. Magical.
