Ingredients:
1 23 oz Light white rum (charcoal-filtered 1-4 years old)
16 oz Rhum Clément Blanc
12 oz Lime juice (freshly squeezed)
13 oz Pomegranate juice
16 oz Monin Grenadine Syrup
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
2 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lime wedge & pomegranate seeds.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

Review:

Freshly pressed pomegranate juice is essential to the success of this deliciously fruity but dry Daiquiri. Sadly, packaged juice doesn't produce a cocktail of comparable quality.

We use a white over-proof pot-still rum, but we haul it back to 30-40ml. For us, this gives backbone to an otherwise timid, but nonetheless delightful, cocktail.

Reading the comments below, I tried it and I would agree rhum agricole takes this to another level. Made this twice. First time to spec: not enough pomegranate. Second time, increased the pomegranate to 30 ml and did a 1:1 split between the light rum and rhum agricole. Great combo of ingredients.

Enjoyed this one. I’m not big on sweet drinks, but I felt it was sour enough as written with the fresh lime juice. Tried halving the sugar syrup, but honestly didn’t notice a significant difference.

this didn't quite cut it for me i was expecting a little more pizazz the fresh pomegranate but it lacked something however i don't know what !!!!

Used 30mls each agricole and light rum. I like it but I’ll use less sugar next time.

Disappointingly - it is worth juicing fresh pomegranates to make this. Disappointing because juicing pomegranates is a real faff. But definitely worth it. Fresh and delicious

Easiest way is to blend the arils and strain off the juice.

Best to cut pomegranates in half (around the equator rather than pole to pole) then squeeze in a pillar juicer - then juicing them is surprisingly easy and efficient.

Used 1 1/4 oz white rum and 3/4 oz white Rhum Agricole. As we like our drinks a bit on the sour side, used half the amount of sugar syrup. It was great. Just a hint of the Martinique rhum flavour and the burst of pomegranate.

Juiced my own pomegranate seeds as recommended and used gomme syrup. It was delicious, would it be improved with powdered sugar and/or Bob's Daiquiri bitters? More pomegranates and limes to buy to explore those possibilities!

Not having the time available to create my own pomegranate juice, and not being able to buy POM ”Wonderful” ditto in Sweden, I bought a local, organic variant, and that turned out really well. 4.5!
