We use a white over-proof pot-still rum, but we haul it back to 30-40ml. For us, this gives backbone to an otherwise timid, but nonetheless delightful, cocktail.
Reading the comments below, I tried it and I would agree rhum agricole takes this to another level. Made this twice. First time to spec: not enough pomegranate. Second time, increased the pomegranate to 30 ml and did a 1:1 split between the light rum and rhum agricole. Great combo of ingredients.
Enjoyed this one. I’m not big on sweet drinks, but I felt it was sour enough as written with the fresh lime juice. Tried halving the sugar syrup, but honestly didn’t notice a significant difference.
Disappointingly - it is worth juicing fresh pomegranates to make this. Disappointing because juicing pomegranates is a real faff. But definitely worth it. Fresh and delicious
Best to cut pomegranates in half (around the equator rather than pole to pole) then squeeze in a pillar juicer - then juicing them is surprisingly easy and efficient.
Used 1 1/4 oz white rum and 3/4 oz white Rhum Agricole. As we like our drinks a bit on the sour side, used half the amount of sugar syrup. It was great. Just a hint of the Martinique rhum flavour and the burst of pomegranate.
