This cocktail confirmed that my raspberry sugar syrup is very sweet, and so I have left it unrated for the moment (I had to calm it down with two dashes of grapefruit bitters). Otherwise it's a flavour combination that is close to my heart, so I may well be back...

Excellent cocktail for a rum fan such as myself - creative, flavourful and complex. I only wish I had had some dark chocolate to enjoy it with. I took Benjamin Kay's advice and added a sprinkle of cinnamon on top of the cacao bitters (which should really feature in the ingredients list, but otherwise I have no criticisms at all!)

I tried this in honour of the excellent Aperol Sour my wife and I used to have sometimes at Sorso, the cocktail bar at the Ritz-Carlton in Abu Dhabi. We both enjoyed this and will make it our go-to as a replacement, although this recipe could use a little editing! 30ml of orange bitters? A 15-minute shake (or "share")? Also, 30ml of egg white is more than is needed, in my opinion - 10ml or 15ml usually suffices. Ignoring those elements, a very tasty drink.

I made this for the sole reason that I wanted to use up some soda water. At the first sip it reminded me a little too much of Screwdrivers at parties in my youth (and I must also confess to using a cheap vodka), so I added two dashes of grapefruit bitters and I have to say that, to my taste, it adds a pleasant complexity that rounds off the harshness of the vodka.
