This might seem like a weird suggestion, however! Hear me out.
I made a version with Nolie prat, and Citadel gin, and after having forced a few friends to try it. I found, that adding a few,(read 2-3) drops of simple sirup, massively improved the drink. It appears to open up and almost have a floral after taste, somewhat akin to a good Alsace Gewürztraminer

I’ve made this twice, and I’ve found that really the champagne matters more than anything, it goes from almost tart to a true summer drink
