I think it probably has to do with the fact that grapefruit and lemon also contribute to the foaming. As for an adjustment to the drink to account for that, I found that throwing the drink a few times was enough to aerate it while not being too over the top

I was missing the apple juice so take my comments with a pinch of salt but... complex. It grew on me.

I was too at first. My original notes were "an interesting flavor, but not that enjoyable. " The apple juice made a massive difference; I think the dryness from unsweetened apple helped to balance the drink.
