I made this and then because it is still hot in the south of France, added Schweppes tonic water. The traditional one has less quinine and sugar in these days and not as fizzy. My husband thinks it is an alcoholic Chinotto! Rich but with a bite and perhaps only one! Really lovely and added glass straws with berries on them. As my NY friends say, one martini, two martini, three martini - floor!

Made these again, my French friends, not used to full blown cocktails, love this recipe. Added Schweppes Tonic water as a spritz. Great summer drink and looks lovely. Schweppes Tonic water has reduced the sugar and the quinine. Much better taste and more subtle.

Made these for Bastille Day. Used caster sugar and what a difference. I don't normally make champagne cocktails as I think good champagne is perfect on its own. Got a cheaper champagne.

I added the syrup slowly and and added another 1cl of curacao. A little bland at first and the syrup helped open up the cocktail. Would also consider added half of everything again to get more for 2 cocktails. Light and easy and could be dangerous with more than one!

Am in France and lucky to have a local wine shop who actually knows his liqueurs. Going to try this tonight and he recommended Vermouth Forcalquier - slightly sweeter and more of a honey style.

It has become a winter favourite but I prefer adding a quarter of lime juice to cut through the sweetness of the benedictine.
