Exquisite (a translation from the Polish Wyborowa) is distilled from a single rye variety, Dankowskie Złote, with the 'Single Estate' declaration referencing the fact that it is only made using raw spirit made at a distillery in Turew, Poland.

Here, the Dankowskie Złote is fermented and distilled using a single copper column still. However, in common with Wyborowa Blue, this raw spirit is then taken to Wyborowa's main distillery in Poznan where it is rectified and reduced to bottling strength using water from the distilleries own well. Some (including me) gripe that 'Single Estate' should mean that all production and even bottling takes place at the one location.

The iconic bottle was designed by architect Frank Gehry, creator of Bilbao's Guggenheim museum, who also happens to be of Polish descent. Those with good memories (or original bottles) will recall that when this line extension was first launched in mid 2004 it was actually named 'Wyborowa Single Estate' with the word 'Exquisite' being relegated to the bottom of the bottle. More recent packaging reverses this with 'Single Estate' now being in the small print at the foot of the unchanged, shapely Gehry bottle.

Aparência:

Crystal clear.

Aroma:

A delicate nose with subtle brazil nuts and biscuity rye bread aromas.

Sabor:

Rounded, bone dry palate with slightly burnt roasted brazil nuts and rye softened by subtle sweet hints of French marshmallow.

Aftertaste:

Cracked black pepper spicy finish with hints of nuts and sesame. In many respects, I find myself preferring Wyborowa Blue.
