Molasses from sugar cane harvested in northern Peru are fermented and then distilled using an old column Scottish three column still. The rum is aged using what the producers describe as a “solera system” using a high percentage of old sherry casks for “up to fifteen years”.
The bottle is wrapped in hand woven Toquilla straw from the Carludovica Palmata, the plants from which Panama hats are made.

Clear, deep amber with burnished copper highlights.
Cinnamon, nutmeg and light black pepper spice with Blackened fruit cake, old leather, tobacco ash and pecan pie. Very faint hairspray-like note.
Sweet, fruity and spice with burnt fruitcake, overripe banana, vanilla, delicate cinnamon and clove spice. Tastes like there’s plenty of added burnt sugar to this medium bodied sipping rum.
Lingering stewed fruits, cinnamon and clove spice.
