Made by Ross William Butler who steeps botanicals in wheat neutral spirit and distils using an alembic still. After distillation Ross steeps the gin in 20 litre glass jars with infusion bags containing lemongrass, cardamom, coriander, cloves, cinnamon, star anise, fennel, lemon and lime for 18 hours

Appearance:

(batch 104, bottle 02) Clear, very faint green tinge.

Aroma:

Pine forest after rain juniper, cardamom, coriander and cinnamon with lemon and lime zest.

Taste:

Soft mouthfeel, perversely with aggressive pine and cardamom spice. Pronounced lemon, lime and cardamom freshness with underlying rootyness. Jagged rather than graceful.

Aftertaste:

Full-on and spicy yet soft.
