Named after a breed of British horse, Cleveland Bay is made from potato and sugar beet, mashed and distilled separately at the family-owned English Spirit Distillery in the Cambridgeshire countryside using 200 litre copper pot stills fitted with a 17.5+ HPE insulated copper reflux column.

Heads and tails are discarded rather than recycled. The vodka is hydrated from 96% alc./vol. to bottling strength and then carbon filtered prior to bottling.

Cleveland Bay horses were first bred in the North Yorkshire district of Cleveland during the 17th century and are still used to pull carriages in royal processions today.
