To quote Edith Giffard, from the family company which makes this liqueur, it's "a subtle blend of an infusion of fresh pineapples ripened under the Caribbean sun, reinforced by a candied pineapple infusion, all enhanced by a 7-year-old Caribbean Rum and some spices."
Due to pineapple's natural enzymes, it is tricky to make a good pineapple flavoured liqueur using fresh pineapples rather than flavouring, and Giffard's first Ananas liqueur example (long discontinued) was an admirable attempt but didn't have the quality of this liqueur which rightly takes its place in Giffard's Premium Liqueur Range.
Due to those natural enzymes, genuine pineapple liqueurs tend to be unstable and need frequent shaking. Giffard seem to have succeeded where they and others previously failed. Launched in May 2017, this liqueur uses flavours extracted from pineapple skin, leaves and flesh, and it took over a year of experimentation to find the perfect variety of pineapple, where the best flavours are in that pineapple and the best way to extract those flavours. Finally, filtration is key to this product's clarity and stability.
