Appearance:

(sample batch No.5 bottle 75 of 500) Clear, transparent.

Aroma:

Pungent estery notes reminiscent of strong blue cheese (Roquefort) with overripe pear, grassy cane sugar and white pepper spice. Estery dried and freshly cut grass with water.

Taste:

Dry, estery and spicy. This is a huge rum which explodes with grassy flavours and muscular peppery spice. Water reveals pear fruit.

Aftertaste:

Overripe banana esters, cut grass and black pepper spirity spice.

Overall:

Wonderfully raw and expressive rather than refined, with intense grassy and fruity esters.
