St George is the patron saint of England and gives his name to the English flag, the St George’s Cross, a red cross on a white background.
Yet George was actually quite an international character. Born in Syria, he was a Roman soldier and killed his famous dragon in Libya. With all due apologies to Beirutis, Catalans and, of course, Georgians, who also boast George as a patron, we are marking his saint's day with a thoroughly English cocktail, the English Martini. It's a spring-fresh marriage of London dry gin, elderflower and rosemary.
