3⁄4 fl oz Overproof aged pot still rum (high-ester 4-6 years old)
3⁄4 fl oz Light gold rum (1-3 year old molasses column)
3⁄4 fl oz Lime juice (freshly squeezed)
1⁄2 fl oz Monin Mango Syrup
1⁄2 fl oz Egg white (pasteurised) or Fee Brothers Fee Foam cocktail foamer

How to make

Glass

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of mango wedge.

Method

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with mango wedge.

We think that our good host is being a bit modest here awarding just four stars. For us, mango and chilli always dance very seductively together so we added two drops of Scrappy's fire tincture, just to raise the temperature a bit.
