Lucuma Foam, micro sorrel
Stir all the ingredients over ice and strain in a rock glass with clear ice. Top with the lucuma foam.
Lucuma foam recipe
500g - warm water
20g - lucuma powder
100g - sugar
6g - methocel
1g - xantham gum
1 pinch of salt
Blend water, lucuma and sugar until completely dissolved. Use a fine mesh strainers to slowly sprinkle Methacel and Xantham into the liquid and blend on high until the liquid starts foaming a lot.
Cool down the liquid and place into ISI container and charge with 2 NO2 canisters and store in the fridge.
