How to make:

Before serve:
Infuse basil into Lillet blanc …
Batch prep: leave fresh basil in bottle of Lillet blac keep refrigerated for a minimum of 30 minutes. Strain out basil leaves and keep chilled.
On bar (make to order): If batch not available, add Lillet to shaker & muddle with fresh basil leaves for 10-15 seconds before fine straining.
Ready to serve;
Add equal parts (30ml) Beesou, monkey 47 & basil infused Lillet & 5ml sugar syrup into a mixing glass, add ice, stir to chill and dilute.
Add block ice to chilled old fashioned glass.
Strain cocktail over ice in glass.
Garnish with basil leaf.
Serve.

1 fl oz Beesou Bitter Honey Aperitif
1 fl oz Monkey 47 gin
1 fl oz Basil infused Lillet
1/6 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
